Abstract:

PROBLEM TO BE SOLVED: To obtain the subject composition capable of masking a strange taste peculiar to a water-soluble vitamin and manifesting excellent stability and heat resistance by formulating the water-soluble vitamin with a specific ester.

SOLUTION: This composition contains (A) a water-soluble vitamin and (B) a polyglycerol ester of a polyvalent fatty acid. The ingredient A is preferably a water-soluble vitamin insoluble in neutral lipids and the content thereof is preferably 1-70 wt.% in the composition. The degree of esterification of the ingredient B is preferably ≥75% and HLB thereof is preferably ≤4. For example, the composition can be prepared by mixing 480 g of a rapeseed extremely hardened oil with 100 g of hexaglycerol octastearate (100% degree of esterification and 3 HLB), dissolving the resultant mixture under heating, adding 400 g of vitamin C to the prepared solution while adding and stirring 20 g of tetraglycerol condensed ricinoleic acid ester and forming the resultant mixture into a granular shape according to a spray cooling method.
